Some of the best nights I can remember during the three years that my husband and I have been together center around baking. The best thing about baking is that you can keep things simple and low-cost or you can get as extravagant as your budget allows. We love baking cookies and every once and a while we'll break out a few glasses and pour some wine to up the romantic factor. Since Christmas is right around the corner I thought that mentioning a date where you can spend time together and enjoy the baked goods afterward would fit in nicely with this post.
Mexican Wedding Cookies and I have a history that dates back to my childhood when my mother would bake them for us to enjoy during the Christmas season. You can adapt the recipe to suit your tastes. I know of one person who adds chocolate chips to the mix. I haven't tried them but I imagine they taste divine. Sit back after you're done baking and kick up your feet while enjoying a glass of wine and some Mexican Wedding Cookies with your significant other.
Things You'll Need:
½ cup of powdered sugar
1 cup of soft butter
2 teaspoon of vanilla extract
2 cups of all-purpose flour
1 cup of almonds or pecans (finely chopped)
¼ teaspoon of salt
powdered sugar
Directions:
-Set your oven to preheat at 325 degrees Fahrenheit and prepare your bowl for mixing.
-Combine ½ cup of powdered sugar, cup of butter and 2 teaspoons of vanilla extract in a decent sized bowl.
-Add in the flour, your nut of choice and salt until your dough begins to stick together. Pour in the dry ingredients slowly to help you keep control of your dough.
-Remove the cookies from the oven as soon as they are ready. Take them off of the baking sheet and place them on wire cooling racks.
-Roll the Mexican Wedding cookies in powdered sugar. Let them cool and roll them again to make sure the cookies are fully coated before they're completely done.
